The Salad Matrix

Soooooo yea, I haven’t written a post in a few days. My bad!! 

These past few months I have fallen into a daily routine of making a big, raw and more often than not vegan salad for lunch. I have found this to be the best way to stay energetic throughout the day and therefore bypass the dreaded afternoon slump. More importantly, however, I find my daily salad absolutely delicious and have come up with a quick and easy formula for making one whether I’m on the go or eating at home!

Add in the following steps in order (although the world probably wouldn’t end if you went out of order) and choose 1 or a few items from each category:

Honestly, pile on those veggies. As many as you want, really. The serving sizes you really want to stick to are the protein (they say around the size *that includes thickness!!* of your palm, not including fingers), and no more than a tablespoon or 2 of olive oil.

(If I am ever to vague about measurements PLEASE do not hesitate to ask, or point out if something was not clear! I am an eyeball it kind of girl but I realize not everyone is). 

Something to think about: Most of us have come to think that it is best to eat a BIG breakfast and go lighter throughout the day. After reading Kimberly Snyder’s book The Beauty Detox Solution, which first taught me about food combining (among many other things), I found that I feel MUCH better eating light throughout the day and saving a heavier meal for dinner time. By eating a lot of cleansing fruits and veggies through out the day your body is perhaps better equipped to process heavier food such as cooked veggies, rice, meat, etc at dinnertime. These foods also tend to cause many of us to feel sleepy afterwards and it is much better to experience that at a time when you are allowed to be a little lazy AKA the evening, after work. We are of course all very different. Entertain the idea, try it out and see how you feel!
